Dourbie's signature wine, Mala Coste, is sourced from four plots at the heart of the garrigue. Garnet red with ruby highlights, it offers aromas of morello cherry, redcurrant, and sweet spice. The palate is fine and harmonious, with tangy red fruit, light silky tannins, and a fresh, well-balanced finish.
Production
Fermented in stainless steel and concrete, followed by two months of separate ageing in barrels and 12 months of blending in large oak foudres. This gives structure and complexity while preserving the character of the fruit.
Vinyard
Sourced from hillside vineyards at 350 m, on classic clay-limestone soils with excellent drainage. Old vines, some over 50 years, yield small quantities of concentrated fruit. The Mediterranean climate with wide diurnal shifts enhances ripeness and balance. Short pruning, green harvesting, and organic methods keep quality consistently high.
Pairing
Pairs beautifully with sweet-savoury dishes like duck breast with figs, or more classic dishes such as slow-cooked leg of lamb and beef bourguignon. It also complements hearty vegetarian options like lentil cake pizza or lentil soup with smoked tofu.
